While A Passover Seder may indeed be sacreligious, I've stuck to only serving Kosher-For-Passover food there. Mostly to give non-Jews an idea of what the holiday entails, and somewhat because these dishes have become comfort food.

PEACH KUGEL

1 box matzah farfel
3 1 lb cans of sliced peaches
7 eggs
1 cup sugar
3/4 cup melted margarine

Preheat oven to 350 F. Soak farfel in warm water and drain until matzoh is "just wet." Mix all ingredients together except for peaches. Layer batter and peaches together in cooking dish. Sprinkle with cinnamon and sugar. Bake 1 hour @ 350 F.

 

CARROT SOUFFLE

2 lbs fresh carrots, boiled until soft
6 eggs
2/3 cup sugar
6 TBS matzoh meal
2 tsp. vanilla
2 sticks butter, melted
dash of nutmeg

TOPPING

6 TBS brown sugar
4 TBS butter, melted
1 cup chopped walnuts

Place carrots and eggs into food processor and puree. Add next 5 ingredients and process until smooth. Bake in greased 9x13 pan at 350 F for 40 minutes. Add topping and bake for 5-10 minutes more.
